Each 18 lbs box contains 36 patties, each weighing 8 oz. There are three sleeves per box, each containing 6 lbs or 12 patties of that particular protein. In the single protein boxes, the sleeves are not labeled, so I use a sharpie if I remove them from the box.
 
The 18 lbs Variety box already contains 6 lbs of each protein (beef, chicken & pork). In this box, the proteins are labeled, but the labels don't always stick to the plastic sleeve, so again, I'd use a sharpie.
 
Feel free to mix and match to build your own 18 lbs variety box if you'd like.
For example: Purchase 12 lbs of Chicken & 6 lbs of Pork
